Tomaso's Spicy Eggplant

My mother Fortunata, made the best Eggplant Parmesan. She used only the finest eggplant, parmesan, and mozzarella chesses and her marinara sauce to create a "melt-in-your-mouth southern Italian favorite". In her honor (and my dad, Tomaso Sr., who loves spicy foods) I have created this pasta sauce.
